Chips, Dips & Sips – Time for Tailgating!

Snacks, they’re a party essential. Even more essential when football is on. This week’s tailgating topic is all about chips, dips and sips. Are you ready? Let’s get snacking!

Cabot Seven Layer Cheese Dip

Take your taste buds on a trip with this layered cheese dip from Cabot Creamery with delicious south-of-the-border flavors. Veggies, beans, cheese and sour cream come together to create a dip that has something for everyone at the party.

A Mexican-inspired dip like this pairs nicely with a crisp white wine with fruity flavors like a Pinot Grigio. Give our new Wine Sisterhood Passionate Pinot Grigio or Middle Sister “Drama Queen” Pinot Grigio a try.

Makes 8 servings

Ingredients:

1 (15 oz.) can refried beans
1 c. Cabot Sour Cream
1 package taco seasoning mix
1 c. diced fresh tomatoes
1 (4.25 oz.) jar diced green chilies, drained
3 oz. Cabot Sharp Cheddar, grated (about 3/4 cup)
3 oz. Cabot Monterey Jack, grated (about 3/4 cup)

Directions:

1. Spoon beans into bowl and heat in microwave. Spread warm beans over 10-inch serving platter.

2. In small bowl, combine sour cream and seasoning mix; spread over beans. Scatter tomatoes, chilies and cheeses over the top. Serve with salsa and chips.

Green Lentil Hummus

Green Lentil Hummus from Blue Jean Gourmet

We love the twist on traditional hummus that Nishta at Blue Jean Gourmet took with her Green Lentil Hummus creation. Trade chickpeas for green lentils when making your next batch of hummus – you won’t be disappointed!

The earthy and garlicky flavors in this dip would go great with a Bubbly – White or Pink. Now you’ve got a reason to pick up the new Middle Sister “Glamour Girl” Pink and White Bubbly wines if you haven’t had a chance to try them yet.

White Bean and Bacon Dip

“A simple dip is a simple pleasure,” says Ingrid at the Cozy Apron. We can’t wait for Saturday to come along, so we can cook up her delicious Creamy White Bean and Apple-Smoked Bacon Dip. Put those cans of beans in the back of the pantry to good use this weekend!

What goes better with the flavor of bacon than a medium-bodied, fruity wine like a Red blend?  We say – Nothing! Pair it with Wine Sisterhood Ravishing Red Blend or Middle Sister Rebel Red.

Roasted Onion Dip

Old favorites, gotta love ‘em. But unfortunately, those same snacks you remember as a kid aren’t always as healthy as you’d like them to be now that adulthood has hit. That’s why we love how Jenny at Spoon Fork Bacon put a healthier twist on the traditional French Onion Dip with her new and improved Roasted Onion Dip. Subbing Greek yogurt for mayonnaise turns a would be heavy dip into a light and guilt-free treat.

Roasting onions creates a beautiful caramelized sweetness. Pair sweet with sweet and try this dip with a Moscato. Wines to try: Middle Sister “Sweet & Sassy” Moscato and Wine Sisterhood Magical Moscato.

Pimento Cheese Dip  

Classy Pimento Dip

A family-favorite of our Wine Sister Natalie Wassum, this Pimento Cheese Dip will satisfy all of the cheese lovers at the party. With two different kinds of cheese and just a hint of heat, you’ll have them coming back to the snack table for seconds!

A cheddar-centric dip like this will pair perfectly with a full-bodied Cabernet Sauvignon. Cheddar and Cab are a classic pairing! Try Monogamy Cabernet or Purple Cowboy Trail Boss Cabernet.

Natalie’s Classy Pimento Cheese Dip

Ingredients:

One 11 oz. log of fresh goat cheese, softened
4 oz. smoked cheddar cheese, coarsely shredded (1 packed cup)
1/2 c. mayonnaise
1/4 c. drained jarred pimientos or piquillo peppers, coarsely chopped
2 scallions, thinly sliced
1 t. sweet pickle relish from a jar
1 clove garlic
1 t. Tabasco
1 t. Horseradish
Salt and freshly ground pepper

Mix ingredients in a large serving bowl. Serve with Ritz crackers, whole radishes and celery ribs.
